意大利芝士蛋糕Tiramisu
材料: 手指餅10條
即溶咖啡粉1包
Kahlua咖啡酒20毫升
Mascarpone芝士250克
鮮忌廉250毫升
蛋黃4隻
蛋白3隻
砂糖45克(分40克及5克兩份)
雲呢拿油1茶匙
吉利丁3塊
製法: 1.用50毫升熱水沖泡咖啡粉,加入砂糖5克和Kahlua咖啡酒。
2.把手指餅放入咖啡酒浸約3秒,然後取起,其餘的手指餅也是這樣做法,把浸透了的手指餅一排排地放進蛋糕模,備用。
3.蛋黃用打蛋器伴勻,然後加入Mascarpone芝士攪勻。
4.再加入砂糖40克和雲呢拿油攪勻,備用。
5.取另一容器打發鮮忌廉至企身,備用。
6.取另一容器打發蛋白,加入少許砂糖。
7.把打發起的蛋白、忌廉加入蛋黃Mascarpone漿內,拌勻,加入已融吉利丁。
8.將一半漿糊倒入已放有咖啡酒手指餅的蛋糕模內。然後再鋪一層咖啡酒手指餅,再倒入餘下的漿糊,放入雪櫃冷藏3小時,食時灑上可可粉。
備註: 秘技:做Tiramisu的技巧最重要有兩點,第一是浸手指餅的程序,許多失敗的原因,是手指餅未浸透而製作,當倒入Mascarpone漿糊時,因為未浸透手指餅,手指餅不夠重量而浮起。如果浸得太多咖啡酒,做出來的Tiramisu又過份濕,要控制得宜,請在浸手指餅時心中數3秒,然後返轉即時取起。第二個失敗原因,是打發鮮忌廉的問題,Mascarpone芝士加入過份打發的企身鮮忌廉,會做成油脂分離,所以鮮忌廉不能打發過度,務必小心。

3. 用橄欖油炒香洋蔥、西芹、煙肉,加入茄膏略炒,然後加入雜香草及香葉,免治牛肉,炒香。
4. 離火拌入麵粉,最後加入牛肉上湯,滾後用慢火煮約5-10分鐘,加鹽及胡椒粉調味。
5. 矮瓜從中切開,取出中間的籽,放在熱水中灼熟。
6. 釀上肉醬,鋪上芝士片,放焗爐或烘架,焗至金黃色。

4. 豬扒用刀背拍鬆,加入胡椒粉、鹽調味。

當意粉煮熟,用濾器過濾多剩的水,但要留起1/4杯水。將意粉加到剛煮的醬汁並混合. 如意粉加到醬汁後太乾的話,可加入預留的1/4 水。
6. 上碟
刮適量巴馬臣芝士碎和切成條狀的羅勒葉撒到意粉上。
